The soil is a mix of clay and sand and limestone with some schist

En Flandre

and its beautifully textured flavors veer from macerated strawberries to warm stones to iodine—making for a complex yet highly approachable Barolo

and the young Saint-Romain provides a stony anchor

the wine is balanced by notes of crushed rocks and earth that make it a perfect pairing for the traditional charcuterie and soups of the Val d’Aoste

The grapes are briefly macerated and the fermentation occurs at controlled temperatures (around 15 degrees Celsius) for two to three weeks

the domaine’s Bourgogne Blanc presents as a Meursault in miniature

neutral foudre for ten months

“Granomelo”—a play on the name of the cru Melogranino from which it is sourced—is 100% Sangiovese from south-facing slopes of sandy clay and silt

followed by another 3 to 4 years in bottle

Guillaume vinifies and ages each parcel separately

The majority of the vines are 75 years old
